Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
Prepare the Cheesy Base:
On the baking sheet, combine Parmesan, Pecorino, grated garlic, fresh thyme, melted butter, and a pinch of black pepper. Spread this cheesy mixture evenly across the tray in a thin layer.
Assemble the Bread:
Lay the sliced baguette directly on top of the cheese mixture. Brush the tops of each slice with additional melted butter. Drape the prosciutto slices either over the bread or in between pieces for even crisping.
Bake:
Bake for 15–20 minutes, or until the bottoms of the crostini are golden, the tops are crisp, and the prosciutto is nicely crisped.
Assemble the Crostini:
Remove from the oven and let cool slightly. Tear open the burrata and spoon generous amounts over each piece of bread. Add fresh peach slices and crispy prosciutto.
Finish and Serve:
Top with fresh basil leaves and a drizzle of hot honey. Serve warm for the best flavor, though they’re equally delicious at room temperature.
