Sprinkle seasoning salt generously over both sides of each chicken breast.
Cover and refrigerate for 30 minutes to allow the flavor to develop.
2. Cook the Bacon:
In a large skillet over medium heat, cook bacon until crisp.
Remove bacon and set aside, but do not discard the bacon grease.
3. Sauté the Chicken:
In the same skillet with the bacon grease, sauté the chicken breasts for 3–5 minutes per side until golden brown.
Transfer chicken to a 9×13-inch baking dish.
4. Make the Honey Mustard Sauce:
In a small bowl, whisk together mustard, honey, mayonnaise, and dried onion flakes.
5. Assemble the Dish:
Spoon some honey mustard sauce over each chicken breast.
Top with mushrooms (if using), crumbled bacon, and a generous handful of shredded Colby-Jack cheese.
6. Bake:
Preheat oven to 350°F (175°C).
Bake uncovered for 30 minutes, or until chicken is cooked through and cheese is bubbly and melted.
