In a large pot, bring salted water to a boil. Add the tortellini and cook according to the package instructions, usually 3-5 minutes for fresh or 7-9 minutes for frozen tortellini. Drain the tortellini and set aside.
Prepare the Beef Steak:
While the tortellini is cooking, heat a large skillet over medium-high heat. Add the thinly sliced beef steak to the skillet and cook, stirring occasionally, until browned and cooked through (about 5-7 minutes). Season with salt and pepper to taste. Remove the steak from the skillet and set aside.
Make the Provolone Sauce:
In the same skillet, reduce the heat to medium. Add a little butter or oil, then pour in a small amount of milk or cream (about 1/2 cup) to create a base for the sauce.
Gradually stir in the shredded provolone cheese. Continue to stir until the cheese melts and the sauce becomes smooth and creamy. Add more milk or cream if you prefer a thinner sauce.
Combine:
Return the cooked beef steak to the skillet and stir to combine with the provolone sauce. Add the cooked tortellini and mix gently, making sure all the tortellini are coated with the rich, cheesy sauce.
Serve:
Once everything is well mixed and heated through, serve immediately, garnished with extra shredded provolone cheese if desired.
