Cheese Sauce for Fries

In a saucepan, melt the butter over medium heat.

Once melted, add the flour and mix well to create a smooth paste (this is your roux). Cook for 1 to 2 minutes, stirring constantly to avoid burning.

2️⃣ Add the Milk:
Gradually whisk in the milk, stirring constantly to avoid lumps. Let it simmer for a minute or two until it begins to thicken slightly.

3️⃣ Incorporate the Heavy Cream:
Pour in the heavy cream and continue stirring until the mixture is smooth and well combined. Let it cook for a few more minutes, stirring occasionally, until it thickens.

4️⃣ Add the Cheese:
Reduce the heat to low and stir in the grated cheddar cheese, a handful at a time. Keep stirring until the cheese is completely melted and the sauce is smooth.

5️⃣ Season and Finish:
Season with salt, pepper, and a pinch of paprika if you like a spicy kick. Stir until well combined.
