Cheese Leek Pasta with Ground Meat – A Simple Comfort Dish!

Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Drain the pasta and set aside, reserving 1/4 cup of pasta water to help loosen the sauce if needed.
Sauté the Leeks and Garlic:

In a large skillet or sauté pan, heat the olive oil over medium heat. Add the sliced leeks and cook for 3-4 minutes, until softened. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.
Cook the Ground Meat:

Push the leeks and garlic to one side of the pan, then add the ground meat. Break it apart with a spoon and cook until browned and fully cooked through, about 5-7 minutes. Stir in the dried thyme (or Italian seasoning), salt, and pepper.
Make the Cheese Sauce:

Lower the heat and pour in the heavy cream, stirring to combine with the meat mixture. Add the Parmesan and mozzarella cheeses, stirring until melted and the sauce is creamy. If the sauce is too thick, add a little chicken or vegetable broth to reach your desired consistency.
Combine Pasta and Sauce:

Add the cooked pasta to the pan with the sauce, tossing to coat the pasta evenly. If the sauce seems too thick, use the reserved pasta water to loosen it up. Adjust seasoning with more salt and pepper if needed.
Serve and Garnish:

Serve the Cheese Leek Pasta with Ground Meat immediately, garnished with extra Parmesan or a sprinkle of fresh parsley if desired.
