Brush both sides of each tortilla with melted butter.

Shape the Cannoli Shells:
Preheat the air fryer to 350°F (175°C).
Roll each tortilla strip into a cylinder shape, securing with a toothpick if necessary.
Air fry the rolled tortillas for 5-7 minutes, or until they’re golden and crispy.
Prepare the Filling:
While the shells cool, mix ricotta cheese and powdered sugar in a bowl until smooth.
Stir in chopped pistachios and mini chocolate chips, if using.
Assemble the Cannoli:
Once the shells have cooled, carefully fill them with the pistachio mixture using a piping bag or a spoon.
Serve:
Optionally, drizzle with honey or sprinkle extra crushed pistachios for added texture and flavor.
