Brush both sides of the tortillas with melted butter.
In a small bowl, mix the sugar and cinnamon, then sprinkle over both sides of each tortilla.
Wrap each tortilla around a cannoli mold or small metal tube. Secure with toothpicks if needed.

Air Fry:
Place the wrapped tortillas in the air fryer basket. Air fry at 375°F (190°C) for 5–6 minutes until golden and crisp.
Let them cool completely before removing the molds.

Make the Filling:
In a bowl, mix ricotta, mascarpone, powdered sugar, and vanilla until smooth.
Gently fold in chopped pistachios and mini chocolate chips (if using).

Assemble the Cannoli:
Transfer the filling into a piping bag or a ziplock bag with the tip cut off.
Pipe the filling into each cooled tortilla shell.
Dip the ends in extra pistachios and drizzle with melted chocolate if desired. 🌟

Serve and Enjoy:
Dust with powdered sugar and serve immediately for the best crunch!
