2. Prepare the Batter:
In a large mixing bowl, beat the eggs and sugar together with a hand mixer or stand mixer on medium speed until the mixture becomes thick and light in color. This should take about 10-15 minutes.
Add the honey and continue to mix until fully incorporated.
3. Sift the Flour:
Sift the strong flour (or cake flour) a couple of times to avoid lumps. Gently fold the flour into the egg mixture in small batches, being careful not to deflate the batter. You can use a spatula or whisk for this step.
4. Pour the Batter:
Once the flour is fully mixed in, pour the batter into the prepared loaf pan. Tap the pan gently on the counter to remove air bubbles.
5. Bake:
Bake the cake in the preheated oven for about 30-40 minutes. You can check the doneness by inserting a skewer into the center of the cake. If it comes out clean, the cake is ready.
If the top of the cake starts to brown too quickly, cover it with aluminum foil during the last 10 minutes of baking.
6. Cool the Cake:
Allow the cake to cool in the pan for about 10 minutes. Then, remove it from the pan and let it cool completely on a wire rack.
