Preheat the oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease the paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a large bowl, beat the eggs and sugar together using an electric mixer on medium speed until thick and pale, about 3-5 minutes.
Add the vanilla extract to the egg mixture and beat until combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in the grated carrots and chopped nuts (if using), making sure everything is evenly distributed.
Step 2: Bake the Cake
Pour the batter into the prepared jelly roll pan, spreading it evenly with a spatula.
Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. The cake should be soft and lightly golden.
While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar.
As soon as the cake comes out of the oven, invert it onto the prepared towel. Carefully peel off the parchment paper.
Starting at one short end, roll the cake and towel together into a tight log. Let the cake cool completely on a wire rack, about 30-45 minutes.
Step 3: Make the Cream Cheese Filling
In a medium bowl, beat together the softened cream cheese and butter using an electric mixer until smooth and creamy.
Gradually add the powdered sugar, 1/2 cup at a time, beating well after each addition.
Add the vanilla extract and a pinch of salt, and beat until the filling is light and fluffy.
Step 4: Assemble the Cake Roll
Once the cake has cooled, gently unroll it and remove the towel.
Spread an even layer of the cream cheese filling over the cake, leaving about 1/2-inch border around the edges.
Carefully roll the cake back up, using the parchment paper to help guide it.
Place the cake seam-side down on a serving platter.
Step 5: Chill and Serve
Refrigerate the carrot cake roll for at least 1 hour to allow the filling to firm up and the flavors to meld together.
Before serving, dust the top of the cake roll with powdered sugar for an extra touch of sweetness.
Slice into individual portions and enjoy!
