Carrot and Egg Breakfast Bites


Sauté the Onion and Carrot: Heat a little olive oil in a skillet over medium heat. Add the chopped onion and carrot, sautéing until the vegetables are softened and fragrant (about 5-7 minutes).

Prepare the Egg Mixture: In a bowl, whisk the egg, flour, and Parmesan cheese together until smooth.

Combine: Once the onion and carrot are cooked, add them to the egg mixture. Stir to combine evenly.

Cook the Mixture: Add a little more olive oil to the skillet and pour the mixture back into the pan. Flatten it out gently and cook over medium heat until golden brown on both sides (about 3-4 minutes per side).

Serve: Once both sides are crispy and cooked through, remove from the skillet and cut into bite-sized pieces.
