Caramel Cheesecake Cookies

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
In a large bowl, beat the unsalted butter, brown sugar, and granulated sugar together until creamy. Add the egg and vanilla extract, mixing until combined. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Fold in the graham cracker crumbs.

2. Shape the Cookies
Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet. Use your thumb or the back of a spoon to create a small indent in the center of each cookie.

3. Add Cheesecake Filling
(If you have the cheesecake filling recipe, spoon a small amount into each indent created in the cookie dough. Otherwise, you can proceed with the next step.)

4. Bake
Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are golden. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

5. Top with Caramel
Once the cookies are fully cooled, drizzle warm caramel sauce over the top of each cookie for a sweet finishing touch.
