Heat olive oil in a large pot over medium heat.
Add the chicken and sausage and cook until browned on all sides.
Remove from the pot and set aside.
2. Sauté the Vegetables:
In the same pot, add the chopped onion, bell pepper, celery, and garlic.
Cook for about 5 minutes, or until the vegetables are softened.
3. Make the Gumbo:
Stir in the diced tomatoes (with their juices), chicken broth, condensed chicken broth, okra, Cajun seasoning, dried thyme, cayenne pepper (if using), and salt and pepper.
Bring the mixture to a simmer.
Let it cook for 20-25 minutes, stirring occasionally, until the chicken and sausage are cooked through and the flavors have melded together.
4. Serve:
Serve the gumbo hot with a side of cooked rice or crusty bread.
