Heat the olive oil in a large skillet over medium-high heat.
Season the pork chops with salt, pepper, and dried thyme on both sides.
Once the skillet is hot, add the pork chops and cook for 4-5 minutes per side until golden brown and cooked through. Remove the pork chops from the skillet and set aside.
2. Make the Garlic Butter Sauce:
In the same skillet, add the butter and minced garlic. Cook for 1-2 minutes until the garlic is fragrant but not browned.
Stir in any juices from the pork chops and scrape the bits off the bottom of the skillet to incorporate all the flavor.
Return the pork chops to the skillet and spoon some of the garlic butter sauce over them. Let them rest in the sauce for a couple of minutes.
3. Make the Mashed Potatoes:
While the pork chops are cooking, bring a pot of salted water to a boil. Add the chopped potatoes and cook for 12-15 minutes, or until tender when pierced with a fork.
Drain the potatoes and return them to the pot. Add the heavy cream, butter, and Parmesan cheese. Mash the potatoes until smooth and creamy, adjusting with more cream or butter as needed. Season with salt and pepper to taste.
4. Serve:
Plate the mashed potatoes and top with the buttery garlic pork chops. Spoon some of the garlic butter sauce over the pork chops and potatoes for extra flavor.
Garnish with fresh herbs if desired, and enjoy!
