Place the whole chicken breast-side down on a cutting board.
Using sharp kitchen scissors or poultry shears, cut along both sides of the backbone to remove it. You can save the backbone for making homemade stock later!
Flip the chicken over and press down firmly on the breastbone to flatten it. You should hear a crack as the breastbone breaks, which makes the chicken easier to cook evenly.
