Butterfly Chicken – Juicy, Tender, and Full of Flavor!

Place the whole chicken breast-side down on a cutting board.
Using sharp kitchen scissors or poultry shears, cut along both sides of the backbone to remove it. You can save the backbone for making homemade stock later!
Flip the chicken over and press down firmly on the breastbone to flatten it. You should hear a crack as the breastbone breaks, which makes the chicken easier to cook evenly.
Step 2: Season the Chicken
Rub the chicken all over with olive oil to ensure the skin becomes crispy when cooked.
Season the chicken generously with salt, pepper, garlic powder, paprika, onion powder, and thyme. Make sure to rub the seasoning under the skin as well for maximum flavor.
Step 3: Cook the Chicken
You can either roast, grill, or bake the chicken depending on your preference.
