Heat avocado oil in a large skillet over medium-high heat.
Add diced chicken and season with salt, black pepper, and Italian seasoning. Cook for 5-6 minutes until golden brown. Remove from the skillet and set aside.
2. Sauté the Aromatics:
In the same skillet, melt butter over medium heat.
Add the shallot and garlic, cooking for 1-2 minutes until fragrant.
3. Cook the Orzo:
Stir in orzo and toast for 1 minute.
Pour in the chicken broth and bring to a simmer.
Cook for 8-10 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.
4. Add Broccoli & Chicken:
Stir in the broccoli florets and return the cooked chicken to the skillet.
Cover and let cook for 3-4 minutes, until the broccoli is tender.
5. Melt the Cheese & Serve:
Stir in the cheddar cheese until melted and creamy.
Remove from heat and serve warm.
