Broccoli and Mozzarella Frittata – A Quick and Healthy Meal

Cut the broccoli into small florets and steam or blanch them in boiling water for about 3-4 minutes until tender but still bright green.

Drain and set aside.

2. Preheat the Oven:
Preheat your oven to 350°F (175°C) if you are finishing the frittata in the oven for a golden top.

3. Beat the Eggs:
In a large bowl, crack the 5 eggs and beat them until well combined. Add black pepper to taste.

4. Cook the Frittata Base:
Heat a non-stick oven-safe skillet over medium heat and lightly grease with oil or butter.

Add the steamed broccoli and sauté for about 2 minutes to enhance the flavor.

5. Pour the Eggs:
Pour the beaten eggs evenly over the broccoli in the skillet. Cook over medium-low heat for about 5-7 minutes, allowing the eggs to set at the edges while the center is still slightly runny.

6. Add Mozzarella (Optional):
Sprinkle the shredded mozzarella cheese on top of the frittata. If you like a melted, golden top, transfer the skillet to the oven and bake for another 5-7 minutes until the cheese is bubbly and the frittata is fully set.

7. Serve:
Let the frittata cool for a minute before slicing and serving.
