Brazilian Coconut Cake (Bolo de Coco)

Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.

Make the Batter:
In a large bowl, beat the softened butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the coconut milk, grated coconut, vanilla extract, and baking powder.

Add the Flour:
Gradually add the all-purpose flour and mix until the batter is smooth and well-combined.

Bake the Cake:
Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Serve:
Let the cake cool completely in the pan. Once cooled, dust the top with powdered sugar and slice into servings.
