Boston Cream Pie Cupcakes

Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
In a bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
In a separate bowl, whisk together the egg, buttermilk, oil, red food coloring, vanilla extract, and vinegar.
Add the wet ingredients to the dry ingredients and mix until just combined.
Fill the cupcake liners 2/3 full and bake for 18-20 minutes, or until a toothpick comes out clean. Let the cupcakes cool completely.
Prepare the Cream Cheese Frosting:

In a large bowl, beat together the cream cheese and butter until smooth and creamy.
Gradually add powdered sugar, vanilla extract, and a pinch of salt. Continue beating until fluffy and smooth.
Frost the Cupcakes:

Once the cupcakes are completely cooled, pipe or spread the cream cheese frosting on top of each cupcake.
Decorate with sprinkles or a garnish of your choice, if desired.
