Börek: Spinach Pie You Will Fall in Love With

Heat olive oil in a large pan over medium heat.
Add the chopped onion and garlic, cooking for 5–7 minutes until softened and fragrant.
Add the chopped spinach and cook for 3–5 minutes, until the spinach is wilted and the moisture has evaporated.
Stir in the feta cheese, ricotta cheese (if using), oregano, salt, and pepper. Remove from heat and let the filling cool slightly.
Step 2: Assemble the Börek

Preheat your oven to 375°F (190°C).
Lightly grease a baking dish or a round cake pan.
Lay one sheet of phyllo dough on a clean surface and brush it with melted butter. Repeat this with 3–4 more sheets, layering them on top of each other.
Spoon the spinach mixture onto the phyllo dough, spreading it evenly across the layers.
Fold in the sides of the dough to create a rectangular shape, then roll the dough tightly into a spiral, like a cinnamon roll.
Place the rolled dough into the prepared baking dish, continuing to brush each layer with butter as you go.
Step 3: Bake the Börek

Brush the top of the börek with the beaten egg to give it a golden finish.
Bake in the preheated oven for 25–30 minutes, or until the pastry is golden brown and crisp.
Remove from the oven and let it cool slightly before slicing and serving.
