Blackened Salmon Stuffed with Spinach & Parmesan

Season the salmon fillets with salt and black pepper to taste. In a small bowl, combine paprika, garlic powder, onion powder, and cayenne pepper. Rub the spice mixture evenly over both sides of each salmon fillet.

2. Cook the Spinach Filling
In a skillet, melt the butter over medium heat. Add the spinach and cook, stirring occasionally, until wilted, about 2-3 minutes. Remove from heat and stir in the Parmesan cheese and mozzarella cheese. The cheese will melt and create a creamy filling.

3. Stuff the Salmon
Using a sharp knife, make a pocket in the middle of each salmon fillet. Carefully stuff each fillet with the spinach and cheese mixture, pressing it gently into the pocket.

4. Cook the Salmon
Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the stuffed salmon fillets, skin-side down. Cook for about 4-5 minutes per side, until the salmon is cooked through and has a crispy, blackened exterior. The salmon should reach an internal temperature of 145°F (63°C) to ensure it is fully cooked.

5. Serve
Remove the salmon from the skillet and serve immediately, garnished with fresh herbs if desired. Pair with your favorite side dishes for a complete meal.
