Pat the salmon fillets dry with paper towels. Use a sharp knife to carefully create a pocket in the center of each fillet, making sure not to cut all the way through.
Season the Salmon:
In a small bowl, combine smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Rub the olive oil on both sides of the salmon fillets and then coat them with the seasoning mixture, pressing gently to ensure the seasoning sticks.
Make the Stuffing:
In a medium bowl, mix the chopped spinach, cream cheese, Parmesan cheese, lemon zest, and lemon juice. Stir until the ingredients are well combined and the mixture is creamy.
Stuff the Salmon:
Carefully stuff the spinach and Parmesan mixture into the pocket of each salmon fillet. Be generous with the stuffing, pressing it in gently so it stays in place during cooking.
Cook the Salmon:
Heat a large oven-safe skillet over medium-high heat. Add a little olive oil to the skillet. Once hot, place the salmon fillets skin-side down and cook for 3-4 minutes, until the skin is crispy.
Flip the fillets over and transfer the skillet to the preheated oven. Bake for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serve:
Remove the salmon from the oven and let it rest for a few minutes before serving. Enjoy it with your favorite sides!
