Blackened Salmon Stuffed with Spinach & Parmesan

Preheat your oven to 400°F (200°C).
2. Sauté the Spinach Filling
In a skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Stir in the chopped spinach and cook for 2-3 minutes, until wilted.
Remove from heat and mix in the Parmesan cheese, cream cheese, and lemon juice. Stir until smooth and creamy. Set aside.
3. Stuff the Salmon
Using a sharp knife, carefully slice a pocket into each salmon fillet.
Stuff the pocket with the creamy spinach and Parmesan mixture.
4. Season the Salmon
Rub the stuffed salmon fillets with blackened seasoning. Make sure they are evenly coated.
5. Bake the Salmon
Place the salmon fillets on a baking sheet lined with parchment paper.
Bake for 12-15 minutes, or until the salmon is flaky and cooked through.
6. Serve & Enjoy
Serve the stuffed salmon with a squeeze of fresh lemon juice for extra brightness.
