Begin by boiling the sweet potatoes in a large pot until they are soft, about 20-25 minutes. You can also bake them in the oven at 375°F (190°C) for 45 minutes or until tender. Once cooked, peel off the skin and mash the sweet potatoes until smooth. You should have about 2 cups of mashed sweet potatoes.
Make the Pie Filling:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, cinnamon, nutmeg, ginger, allspice, vanilla extract, and salt. Stir until all the ingredients are well mixed.
Add the eggs, evaporated milk, heavy cream, and softened butter. Mix thoroughly until the filling is smooth and creamy.
Prepare the Pie Crust:
If using a pre-made pie crust, unroll it and place it in a 9-inch pie dish. If you prefer to make your own, simply roll out dough and line the pie dish.
You can sprinkle a tablespoon of sugar over the crust to add a slight sweetness, but this step is optional.
Fill and Bake the Pie:
Pour the sweet potato mixture into the pie crust, smoothing the top with a spatula.
Bake the pie for 45-50 minutes, or until the filling is set and a toothpick inserted into the center comes out clean. The edges of the crust should be golden brown.
Cool and Serve:
Allow the pie to cool at room temperature for at least an hour before slicing. This helps the filling set perfectly.
Serve the pie on its own or topped with a dollop of whipped cream or a scoop of vanilla ice cream.
