Best Beef Enchilada Casserole | Flavorful and Comforting

In a large skillet, heat a tablespoon of oil over medium-high heat. Add the ground beef, cooking until browned and fully cooked. Drain any excess fat.

Add Aromatics:
Add the diced onion and minced garlic to the skillet with the beef. Cook for about 2-3 minutes, until the onion softens and becomes translucent.

Season the Beef:
Stir in the taco seasoning (or your own homemade seasoning) and a pinch of salt and pepper. Add the enchilada sauce, mixing everything together. Let the mixture simmer for 5-7 minutes to let the flavors combine and thicken slightly.

Assemble the Casserole:
Preheat your oven to 350°F (175°C). In a 9×13-inch baking dish, spread a small amount of the beef mixture to cover the bottom. Layer 4 tortillas over the beef, followed by half of the beef mixture, and a generous portion of cheese. Repeat the layers, ending with the remaining cheese on top.

Bake the Casserole:
Cover the casserole with aluminum foil and bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly. For a golden top, remove the foil during the last 5 minutes of baking.

Serve:
Once the casserole is done, remove it from the oven and let it cool for a few minutes. Serve with a dollop of sour cream and garnish with chopped cilantro for extra freshness.
