Preheat Oven: Set your oven to 200°C (400°F).
Prepare the Filling: In a saucepan over medium heat, combine the frozen berries, sugar, and vanilla. Stir in the cornstarch and simmer for 5–7 minutes until the mixture thickens. Remove from heat and let it cool slightly.
Roll the Pastry: Roll out the puff pastry on a lightly floured surface. Cut into rectangles or squares, depending on how you want to shape your pastries.
Assemble: Spoon the berry mixture onto one half of each pastry piece, sprinkle with chopped nuts, then fold over and seal the edges using a fork. Cut a few slits on top for steam to escape.
Egg Wash: Brush the tops with beaten egg for a glossy, golden finish.
Bake: Place pastries on a baking sheet lined with parchment paper. Bake for 15–20 minutes or until golden and puffed.
Cool and Serve: Allow to cool slightly before serving. Dust with powdered sweetener if desired.
