Cook the Pasta: Boil the jumbo pasta shells according to the package instructions. Once cooked, drain and set them aside to cool slightly.
Cook the Beef: In a skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Once browned, drain any excess fat and stir in the marinara sauce. Remove the skillet from heat and set it aside.
Prepare the Ricotta Filling: In a mixing bowl, combine the ricotta cheese, egg, Italian seasoning, salt, and pepper. Mix until smooth and well combined.
Stuff the Shells: Carefully fill each pasta shell with the ricotta mixture, using a spoon to pack it in gently.
Assemble the Dish: Place the stuffed shells into a baking dish. Once all the shells are filled, spoon the beef and marinara mixture over the top. Sprinkle with shredded mozzarella and grated Parmesan cheese.
Bake: Cover the dish with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden on top.
