Beef Stew Recipe in a Crock Pot: Easy, Hearty, and Tender

Prepare the Ingredients: Start by preparing the vegetables: peel and slice the carrots, peel and cube the potatoes, slice the celery, chop the onion, and mince the garlic.

Layer the Crock Pot: Place the beef stew meat in the bottom of your crock pot. Add the carrots, potatoes, celery, onion, and garlic. Season with thyme, rosemary, bay leaf, salt, and pepper.

Add the Broth: Pour the beef broth over the ingredients in the crock pot, ensuring everything is covered.

Cook: Cover the crock pot and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender and the vegetables are cooked through.

Thicken the Stew (optional): If you prefer a thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the stew about 30 minutes before serving. Let it cook for the remaining time.

Serve: Once the stew is ready, remove the bay leaf and taste for seasoning. Adjust with salt and pepper if needed, and serve hot. This stew pairs wonderfully with crusty bread for dipping.
