Stir in the frozen mixed vegetables, beef broth, Worcestershire sauce, tomato paste, and dried thyme. Cook for another 5-7 minutes, stirring occasionally, until the mixture is heated through and the flavors meld. Season with salt and pepper to taste.
Assemble the Shepherd’s Pie:
Transfer the beef mixture into a greased 9×9-inch (or similar-sized) baking dish.
Spread the prepared mashed potatoes evenly over the top, covering the beef mixture completely.
Use a spatula or spoon to smooth the potatoes into an even layer. For a decorative touch, you can use the back of a fork to create a pattern on top.
Bake the Shepherd’s Pie:
Dot the mashed potatoes with small pieces of butter.
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the potatoes are golden brown and the filling is bubbling around the edges.
If you prefer a more golden top, broil for an additional 2-3 minutes, but be sure to watch it closely to avoid burning.
Serve and Enjoy:
Remove from the oven and let it cool for a few minutes before serving. This allows the filling to set.
Serve with a simple green salad or garlic bread for a complete meal.
