Make the Cake Batter: In a mixing bowl, combine the mashed bananas, egg, and vanilla extract. Stir in the flour, baking powder, baking soda, salt, cinnamon (if using), and milk until smooth.
Combine and Cook: Pour the cake batter into the skillet over the caramelized sugar. Smooth the top with a spatula, then cover the skillet with a lid and cook on low heat for about 10-12 minutes, or until the cake is set and a toothpick comes out clean when inserted into the center.
Flip the Cake: After the cake is cooked through, carefully flip it over onto a serving plate to reveal the beautifully caramelized bottom.
