Banana Pancakes (No Oven)

Mash the Banana: In a bowl, mash the ripe banana until smooth.

Mix the Wet Ingredients: Add milk, egg, vanilla extract, and melted butter to the mashed banana. Stir until everything is well combined.

Combine Dry Ingredients: In a separate bowl, whisk together flour, sugar (optional), baking powder, and salt.

Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are fine.

Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and add a small amount of butter. Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for about 2-3 minutes on the first side, until bubbles form and edges look set. Flip and cook for another 1-2 minutes until golden brown.

Serve: Serve the pancakes warm, topped with sliced bananas, maple syrup, or any other toppings of your choice.
