Baked Zucchini: A Healthy and Tasty Snack for the Whole Family


Wash the zucchini and cut them into slices. Grate the carrot and chop the onion and pepper into small pieces. Halve the cherry tomatoes.

Make the Batter:
In a large bowl, whisk together the eggs, oregano, garlic powder, and black pepper. Add the flour and mix until the batter is smooth.

Combine with Vegetables:
Add the zucchini, grated carrot, chopped onion, diced pepper, and cherry tomatoes into the batter. Stir in the ricotta cheese to create a creamy texture.

Prepare the Baking Tray:
Preheat the oven to 180°C (350°F). Grease a baking tray with olive oil, or line it with parchment paper.

Bake the Zucchini:
Pour the vegetable mixture onto the prepared tray and spread it out evenly. Bake for 25-30 minutes, or until the top is golden brown and the zucchini is tender.

Serve:
Let the baked zucchini cool for a few minutes before slicing and serving. Enjoy your delicious and healthy snack!
