Baked Whole Halloumi with Apricots and Honey

Preheat your oven to 200°C (390°F).
Toss apricot slices with ½ tbsp olive oil and spread them on a baking dish.
Roast for 10 minutes, until they start to soften.
2. Prepare the Halloumi:
While the apricots bake, score the halloumi with diagonal cuts to help it absorb flavor.
After 10 minutes, place the halloumi in the baking dish with the apricots.
Drizzle with 1 tbsp olive oil, massaging it into the cuts.
3. Bake Until Golden & Charred:
Increase the oven temperature to 250°C (480°F) and set to grill (broil) mode.
Bake for 10 more minutes, until the halloumi is golden and slightly charred on top.
4. Add Flavorful Finishing Touches:
In a small bowl, whisk together honey, harissa paste, and lemon juice.
Drizzle this over the baked halloumi and apricots while still warm.
Sprinkle with scallions and fresh thyme leaves before serving.
