Baked Egg Casserole

Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with olive oil or non-stick spray.

Prepare the Veggies:
In a skillet, sauté the diced onions and bell peppers in a little olive oil until they are soft, about 5 minutes. If using, add the crumbled bacon or sausage and cook for an additional 2 minutes.

Whisk the Eggs:
In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until fully combined.

Assemble the Casserole:
Layer the cooked potatoes (or hashbrowns) in the bottom of the prepared baking dish. Top with the sautéed vegetables and meat mixture. Pour the egg mixture evenly over the top, then sprinkle with the shredded cheese.

Bake the Casserole:
Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the top is golden brown. You can check by inserting a knife in the center—it should come out clean.

Cool and Serve:
Let the casserole cool for 5-10 minutes before slicing and serving. Enjoy warm!
