Baked Cottage Cheese Eggs

Preheat your oven to 375°F (190°C). Grease a small baking dish or ramekins with non-stick spray or a little oil.

Prepare the Vegetables:

In a small skillet, sauté the chopped onion, bell pepper, and spinach over medium heat until softened, about 4-5 minutes. Set aside to cool slightly.

Mix the Ingredients:

In a bowl, whisk together the cottage cheese, eggs, garlic powder, onion powder, salt, and pepper.

Add the sautéed vegetables to the mixture and stir to combine.

Assemble and Bake:

Pour the egg mixture into the prepared baking dish or ramekins.

If using, sprinkle the shredded cheese on top.

Bake for 15-20 minutes or until the eggs are set and lightly golden on top.
