Baked Cottage Cheese Eggs: A Comforting Breakfast Tradition

Lightly grease a baking dish (about 8×8 inches or a similar size).
In a large mixing bowl, whisk together the cottage cheese, eggs, shredded cheese, and green onions (if using). Season with salt and pepper. If adding vegetables, fold them in.
Pour the mixture into the prepared baking dish, spreading it evenly.
Bake for 25-30 minutes or until the eggs are fully set and the top is lightly golden.
Remove from the oven, let it cool for a few minutes, and serve warm.
