Ingredients
For the Chicken and Vegetable Patties:
1 onion, roughly chopped

A handful of fresh parsley, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

2 cloves garlic, minced

3 chicken fillets (600–700g / 1.3–1.5 lb), cut into chunks

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika

½ teaspoon dried oregano

½ cup breadcrumbs

1 egg

For the Creamy Potato Mash:
4 medium potatoes, peeled and chopped

2 tablespoons butter

¼ cup milk (or more for desired consistency)

½ teaspoon salt

¼ teaspoon black pepper

For the Tomato Sauce:
1 tablespoon olive oil

1 small onion, finely chopped

1 garlic clove, minced

1 can (400g/14oz) crushed tomatoes

1 teaspoon dried basil

½ teaspoon sugar (optional, to balance acidity)

Salt and pepper, to taste
