Baked Aubergines with Mozzarella and Ham: A Quick and Easy Delight

Preheat your oven to 180°C (350°F). Grease a baking dish with vegetable oil.

2. Prepare the Potatoes:
Boil the potatoes in salted water for about 10-12 minutes, until they are tender but not falling apart. Drain the water and mash the potatoes with a pinch of salt and black pepper to taste. Set aside.

3. Prepare the Aubergines:
Slice the aubergines into rounds about 1/2 inch thick. Lay them on a baking tray, drizzle with vegetable oil, and season with salt and black pepper. Bake the aubergines in the preheated oven for about 10 minutes, or until they are tender and slightly golden.

4. Assemble the Dish:
In your greased baking dish, layer the mashed potatoes evenly on the bottom. Arrange the baked aubergine slices on top of the potatoes. Sprinkle the spring onion and half of the shredded mozzarella over the aubergines.

5. Add Ham and Mozzarella:
Place the slices of cooked ham on top of the aubergines, followed by the remaining shredded mozzarella. Sprinkle black pepper over the top to season.

6. Bake Until Golden:
Bake the assembled dish in the oven for another 10-15 minutes, or until the cheese is melted, bubbly, and golden brown.

7. Serve:
Once baked, remove from the oven and let it cool for a couple of minutes. Serve hot and enjoy the combination of cheesy goodness and savory flavors.
