Baked Apples with Feta, Honey, and Cranberries

Preheat the oven to 375°F (190°C).

Prepare the Apples:
Slice the apples in half and scoop out the core to create a small well in each half. Arrange the apple halves in a baking dish with the cut-side up.

Fill the Apples:
Drizzle the apple halves with olive oil. Then, fill the center of each apple with crumbled feta cheese and chopped cranberries.

Bake:
Bake the apples for 15-20 minutes or until the apples are tender and the feta cheese begins to melt.

Drizzle and Season:
Once baked, remove the apples from the oven. Drizzle honey over the apples, and sprinkle fresh thyme leaves on top. Season with salt and pepper to taste.

Optional Garnish:
For added crunch, garnish with chopped walnuts before serving.
