Avocado Pasta Salad – Fresh & Creamy

Start by cooking the pasta in a large pot of salted water, following the package instructions until it is al dente.

Drain the pasta and let it cool in a large salad bowl.

2. Prepare the Avocado:
While the pasta cools, cut the avocado in half and remove the pit.

Scoop the flesh out with a spoon and mash it in a small bowl.

Add the lime juice to the mashed avocado to prevent oxidation and to enhance its fresh flavor.

3. Add Cherry Tomatoes:
Wash the cherry tomatoes and cut them in half.

Gently mix them into the cooled pasta.

4. Combine the Ingredients:
Add the mashed avocado over the pasta and tomatoes, then mix gently to coat all the ingredients evenly.

5. Season and Serve:
Season with salt and pepper to taste.

Serve immediately or refrigerate for a cooler, even fresher salad.
