Apple Cranberry Crisp with a Crunchy Oat Topping – Sweet, Tart & Perfectly Cozy!

Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
Prepare the Filling:

In a large bowl, combine the sliced apples, cranberries, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, cornstarch, and vanilla extract. Toss gently to coat the fruit evenly.
Pour the fruit mixture into the prepared baking dish, spreading it into an even layer.
Make the Crunchy Oat Topping:

In a separate bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt.
Add the cubed cold butter to the dry ingredients. Use a pastry cutter, fork, or your hands to work the butter into the dry mixture until it forms a crumbly texture.
Stir in the chopped nuts, if using.
Assemble the Crisp:

Evenly distribute the oat topping over the apple and cranberry filling in the baking dish.
Bake:

Bake in the preheated oven for 45-50 minutes, or until the topping is golden brown and the filling is bubbling. If the topping is browning too quickly, cover the dish with aluminum foil and continue baking.
Serve:

Let the crisp cool slightly before serving. Top with a scoop of vanilla ice cream or a dollop of whipped cream for the ultimate treat.
