In a bowl, toss the sliced apples with sugar, cinnamon, lemon juice, and flour until evenly coated. Set aside to marinate for 10–15 minutes.
Roll and Cut the Pastry:
On a floured surface, roll out the puff pastry if needed.
Cut into squares or rectangles depending on the style you want (hand pies or turnovers work well).
Assemble:
Place a spoonful of apple filling in the center of each pastry piece.
Fold over to form a triangle or rectangle and seal the edges with a fork.
Brush with beaten egg and sprinkle with coarse sugar if desired.
Bake:
Preheat oven to 200°C (390°F).
Place pastries on a baking sheet lined with parchment paper.
Bake for 20–25 minutes or until puffed and golden brown.
Cool and Serve:
Allow to cool slightly before serving. Best enjoyed warm!
