Grease a 9 x 13″ pan.
In a large mixing bowl, combine the vegetable oil, sugar, and eggs. Stir until smooth.
Gradually add the flour and baking soda, mixing until well combined.
Stir in the vanilla extract, cinnamon, pecans, and chopped apples.
Pour the batter into the prepared pan and spread it evenly.
Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
Cool the Cake:
Allow the cake to cool in the pan for about 2 hours, ensuring it cools completely before frosting.
Prepare the Frosting:
In a small saucepan, combine the butter, brown sugar, evaporated milk, and vanilla extract.
Bring the mixture to a boil and let it simmer for 2 minutes.
Once the 2 minutes are up, place the saucepan in a bowl filled with ice water to cool the frosting.
Once the frosting has thickened and cooled to a spreading consistency, beat it until smooth.
Frost the Cake:
Spread the frosting evenly over the cooled cake.
