Apple Butter Cookies

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Cream the Butter and Sugar:

In a large bowl, beat together the softened butter and sugar until light and fluffy, about 2-3 minutes.
Add Wet Ingredients:

Add the egg and apple butter to the butter mixture. Beat until combined and smooth.
Mix Dry Ingredients:

In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
Combine Wet and Dry Ingredients:

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Optional Add-ins:

Stir in the chopped walnuts or raisins, if using, to add texture and sweetness to the cookies.
Scoop and Bake:

Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
Flatten each ball slightly with the back of a spoon or your fingers.
Bake:

Bake for 10-12 minutes, or until the edges of the cookies are golden brown. Keep an eye on them as baking times may vary slightly depending on your oven.
Cool:

Allow the cookies to cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
