Peel and grate the apples into a bowl.
In a skillet, melt the butter over medium heat and add the grated apples.
Stir in the sugar (if using) and cinnamon. Cook for 5-7 minutes, allowing the apples to soften and release their juices. Set aside to cool.
Step 2: Make the Dough
In a mixing bowl, combine the sugar and vanilla extract (or vanillin).
Mix until the dough becomes soft and pliable. If needed, chill the dough in the fridge for 30 minutes for easier handling.
Step 3: Assemble the Cookies
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Roll out the dough on a floured surface and cut it into small rounds or squares.
Place a spoonful of the apple filling in the center of each piece of dough, then fold the dough over to create a “basket” shape. You can crimp the edges or leave them open for a more rustic look.
Step 4: Bake the Cookies
Place the assembled cookies on the baking sheet and bake for 15-18 minutes, or until the dough is golden brown.
Step 5: Cool and Serve
Allow the cookies to cool slightly before serving. These cookies are best enjoyed fresh but can also be stored in an airtight container for a couple of days.
