Apple Basket Cookies: A Sweet, Cozy Treat for Fall

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
Cream Butter and Sugar: In a large bowl, beat the softened butter, brown sugar, and white sugar together until creamy and light in texture (about 2-3 minutes).
Add Egg and Vanilla: Beat in the egg and vanilla extract until fully incorporated.
Add the Dry Ingredients: Gradually add the dry ingredients to the butter mixture, mixing until just combined.
Mix in the Apple and Oats: Stir in the chopped apple, rolled oats, and walnuts (if using) until evenly distributed.
Shape the Cookies: Scoop tablespoon-sized portions of dough and roll them into small balls. Place each ball on the prepared baking sheet. Using your thumb or the back of a spoon, gently press the center of each cookie to create a small well, forming a “basket” shape.
Bake the Cookies: Bake for 10-12 minutes or until the edges are lightly golden. The cookies will firm up as they cool.
Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
