Heat olive oil in a large pot over medium heat.
Add the diced onion and minced garlic, sautéing until soft and translucent.
Stir in the sliced carrots and celery, cooking for another 5 minutes until they begin to soften.
2️⃣ Add the Spices:

Sprinkle in the turmeric, ginger, cumin, and black pepper.
Cook for 1 minute, stirring frequently to release the flavors.
3️⃣ Add Broth & Chicken:

Pour in the chicken broth and bring the soup to a gentle boil.
Reduce the heat to a simmer and let it cook for about 10 minutes.
4️⃣ Combine Remaining Ingredients:

Stir in the shredded cooked chicken and chopped kale or spinach.
If using, add the cooked quinoa or rice for extra heartiness.
Simmer for another 5-10 minutes, until the greens are wilted and the soup is heated through.
5️⃣ Finish & Serve:

Stir in the fresh lemon juice and season with salt to taste.
Garnish with fresh parsley and serve hot!
