Amazing Orange and Almond Cookies

Preheat your oven to 350°F (175°C).

Line a baking sheet with parchment paper for easy cleanup.

Mix Dry Ingredients:

In a large bowl, combine the almond flour, sugar, and salt.

Add the Zest and Extract:

Stir in the orange zest and almond extract (if using), blending everything together.

Add Wet Ingredients:

In a separate bowl, whisk the egg whites until they’re slightly frothy (you don’t need to stiff peaks, just light and airy).

Add the egg whites, orange juice, and stir until everything is well combined.

Form the Cookies:

Scoop spoonfuls of dough and roll them into balls (about 1 inch in diameter) and place them onto the prepared baking sheet.

You can flatten them slightly with your fingers or the back of a spoon.

Bake:

Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden and firm to the touch.

Cool and Serve:

Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Enjoy with a cup of tea or coffee!
