Heat olive oil in a small skillet over medium heat.
Add chopped spinach and sun-dried tomatoes and cook for a few minutes until the spinach wilts and the tomatoes soften. Remove from heat.
Step 2: Prep the Chicken
Carefully slice each chicken breast horizontally to create a pocket, making sure not to cut all the way through.
Season the inside of the chicken with salt, pepper, and Italian seasoning.
Step 3: Stuff the Chicken
Fill each chicken breast with the spinach and sun-dried tomato mixture, then add shredded mozzarella cheese.
Use toothpicks to secure the opening and keep the filling inside.
Step 4: Air Fry the Chicken
Preheat the air fryer to 375°F (190°C).
Lightly coat the air fryer basket with cooking spray.
Place the stuffed chicken breasts in the basket and cook for 18-22 minutes, flipping halfway through.
Ensure the internal temperature reaches 165°F (74°C) and the outside is crispy and golden.
Step 5: Serve and Enjoy
Remove the toothpicks carefully before serving.
