Air Fryer Churro Cheesecake Donut Cookies

In a large bowl, whisk together the flour, granulated sugar, cinnamon, baking powder, and a pinch of salt.
Add the softened butter and mix until the mixture is crumbly.
In a separate bowl, beat the eggs and milk together. Add to the dry ingredients and mix until a dough forms.
Divide the dough into small balls, about the size of a tablespoon.
2. Air Fry the Donut Cookies:
Preheat your air fryer to 350°F (175°C) for about 5 minutes.
Lightly grease the air fryer basket with cooking spray or use parchment paper.
Place the dough balls into the air fryer basket, leaving a little space between them.
Air fry at 350°F for about 6-8 minutes or until golden brown and cooked through. You may need to do this in batches depending on the size of your air fryer.
3. Prepare the Cheesecake Filling:
While the churro donut cookies are cooking, make the cheesecake filling.
In a medium bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy.
4. Make the Cinnamon Sugar Coating:
In a small bowl, mix together the granulated sugar and cinnamon.
Once the donut cookies are done and slightly cooled, brush them with melted butter and roll them in the cinnamon sugar mixture to coat them evenly.
5. Fill the Donut Cookies:
Once the donut cookies have cooled slightly, cut them in half (like a sandwich) and pipe or spoon a generous amount of cheesecake filling in between the two halves.
