A Snack That Hits the Spot: Crispy Garlic Parmesan Potato Bites

Preheat your oven to 400°F (200°C).
Wash and peel the potatoes (if desired) and cut them into small cubes or bite-sized pieces, about 1-inch thick. Try to make them as uniform as possible so they cook evenly.
Place the potato cubes into a large bowl and drizzle with olive oil. Toss to coat the potatoes evenly in the oil.
Step 2: Season the Potatoes
Add the garlic powder, onion powder, oregano, smoked paprika, salt, and pepper to the bowl. Toss everything together to ensure the potatoes are well-seasoned on all sides.
Add the grated Parmesan cheese and toss again until the potatoes are coated with the cheese.
Step 3: Roast the Potatoes
Spread the seasoned potato cubes evenly on a baking sheet in a single layer. Avoid overcrowding the potatoes to ensure they crisp up nicely.
Roast in the preheated oven for 25-30 minutes, flipping the potatoes halfway through to ensure they cook evenly and get golden brown on all sides.
Once the potatoes are crispy on the outside and tender on the inside, remove them from the oven.
Step 4: Serve
Transfer the crispy garlic Parmesan potato bites to a serving platter.
Garnish with freshly chopped parsley for a pop of color and a fresh, herbaceous flavor.
Serve immediately with a side of your favorite dipping sauce, such as ketchup, ranch, or a creamy garlic dip. Enjoy!
